Instructions
- Blanch pork bones in boiling water for 10 minutes. Drain and rinse thoroughly.
- Return bones to pot with 4 quarts cold water. Simmer vigorously for 4 hours until broth turns milky white.
- Tie pork belly into a roll and braise in soy sauce and mirin for 90 minutes. Cool and slice thin.
- Strain broth. Season with miso paste, sesame oil, and salt to taste.
- Cook noodles per package directions. Drain well — do not rinse.
